CSA haul {3/24}

CSA

This week our CSA included:

green onions, oranges, beets, lots of strawberries, rainbow chard, and lettuce. We picked up some cherry tomatoes at the farmer’s market, as well.

I’ve never really cooked with beets. So, I look forward to the challenge. I plan on making a beet cake to ease into it, because when in doubt, add chocolate.

I’m just a few days away from running my 10k. It’s on Saturday. I’m nervous, but ready to get it over with. My body is sick of being perpetually sore and t’s getting too hot to run in the evenings after work. With that being said, I’ve been having a great time competing with myself and comparing my distances and times with each progressing week. And I’m still entirely amazed that I can run 6.2 miles. Also, I have the most supportive friends.

I stopped in the store and picked up a pack of Abita Strawberry (limited release). This is the first time I’ve seen it in stores, but I had it when we went to the Abita Brewery. I know it’s not champagne, but can I drink it with a few of the strawberries from the CSA? I bet it will be amazing.

Easter egg hunt! {a roundup}

I’m trying to convince my friends to let me host an Easter egg hunt for adults. I live in a place that mostly resembles Ewok Village, and it would be the best for hiding eggs. My friends are not entirely sold on the idea, but maybe if I throw in some booze and an endless supply of egg salad sandwiches, I can get them to join in.

Let’s just get right into why this is amazing:

It’s no bake!

Right? You know how exciting that is.

Also, it’s made with avocados. So, you can act like you have superior tastes and like this is a healthy pie. (It’s not.)

And it’s made in a blender. (Is that better or worse than a hand mixer? I can’t decide.)

I found this recipe over at How About Orange. It’s originally from the California Avocado Commission.

Ingredients:
2 avocados, peeled
1/2 cup lemon juice
1 14 oz. can sweetened condensed milk
graham cracker pie crust

 Instructions:
I just plopped everything in the blender and let it rip until the engine almost burnt out. Looking back, the recipe says to blend the avocado and lemon juice first, then add the condensed milk last, after the avocado is well-blended. Maybe that’s why mine came out looking like funfetti. Or because the blender isn’t the best. Whatever it was, I just went with it. Sometimes baking is about the mistakes.

Pour the mixture into a pre-made graham pie crust (I’m not above it), and refrigerate for at least an hour.

 The taste? Sort of like key lime pie. Or at least you’re tricked into thinking you’re about to eat key lime pie, because it’s so green. It’s a little creamier and definitely has a hint of avocado. I served it with whipped cream.

Sigh. Why did our weekend in Apalachicola have to end? My friends and I rented a condo by the bay and spent most of our time inebriated reveling in the charm of this ‘old Florida town.’

Why do sleepovers disappear once we grow up? Waking up next to my friends is the best, and not just because of their morning cocktail skills, but because they remember to buy pickled green bean stirrers.

Our condo came with bikes, so naturally we took to the town (which couldn’t have been larger than a square mile).

Apalachicola has a large art scene. There are quite a few galleries and displays of local artists are everywhere. My favorite were the garden decor and sculptures.

Yay! It’s here again. I’m so happy this weekend is here. I’ve been on vacation for the past three weekends. Ryan and I went to New York for my birthday (no pictures, sorry), and spent the last weekend at a beach house with some friends. On our way back we stopped at this antique car graveyard outside of Tallahassee. I snapped some photos and placed them on my flickr.

This weekend I’m only doing two things: I’m getting a massage (!), and watching the last episode of Battlestar Galatica (!!!). Last episode ever. What am I going to do with my life? I’m going to need the massage just to calm down from the tumultuous after-effects. Besides that, I’ll be vegging out. Here are a few links from around the internet.

the weekender 3/16/2012



Happy weekend! I’m always curious to see what household item my cats will turn into their next play toy. Watson has no idea how much my heart melts when I see him hold this plastic rose in his mouth.

My friends and I rented a beach house in Apalachicola this weekend. I plan on spending every second in its over-sized jacuzzi tub. Sorry, friends. Ryan’s Irish band is playing at the historic theater there for St. Patty’s Day.

Last night I ran 5 1/2 miles! And then went and died in a Little Caesar’s Hot n Ready. It was too ambitious of me to think I could run for that long and cook dinner. Lesson learned. But I’m only .75 miles away from my 10k goal. My official 10k is at the end of the month.

I’ve had this dish two nights in a row and for lunch. Not because it’s intensely flavorful, cheap, and fast to make (although, it is all of these things), but it’s because cabbage is both a blessing and a curse.

How is it that I’m never out of cabbage? It always seems like a great idea to buy it at the store. How tasty! And for only $4 a head, you can count on it to feed you all week. But by day three, you have to get creative, or at least used to eating the same thing.

Fortunately, this recipe reheats well. And it’s delicious.

SPICY ASIAN CABBAGE
yields: too much
prep time: 10 minutes
cook time: 15 minutes

ingredients

ingredients:
-2 Tbsp sesame oil
-1/2 large onion, diced
-2 green onions, diced (not pictured)
-1 Tbsp minced garlic
-1 tsp. ground ginger
-3/4 cup shredded carrots
-2 Tbsp. nutritional yeast
- 4 cups shredded cabbage*
- 3 Tbsp soy sauce
-2 eggs

*I used napa cabbage. 4 cups of shredded cabbage was about 1/4 of the large head. Be forewarned, if you plan to use the whole cabbage, you’ll be eating this for days.

Do it!
-Shred the cabbage lengthwise, so you have thin long pieces.
-In a large skillet, heat the sesame oil, add onions, garlic, and ginger and sauté until they’re tender – about five minutes. Add the carrots and sauté for another two minutes. Mix in nutritional yeast.
-Cook in cabbage a few scoops at a time and let it cook down. Continue until you’ve cooked down all of the cabbage. This works best in a bigger pan. It cuts down the cooking time, which keeps your cabbage from getting too soggy.

-While your cabbage is cooking, whisk together the two eggs.
-Create an opening in the skillet. Pour the whisked eggs into the opening and let them cook for a few minutes (like scrambling an egg).

-Once the eggs begin to cook, scramble the mixture into the rest of the dish until all of the egg has cooked.

Let it cool.,then eat! Which is my favorite part.

I had so much cabbage left over, I had to use it as a prop.

I guess it’s safe to say I’m a little too into cats…and food.

Luckily, so are my friends. And we got this brilliant idea to make a pizza cat.

Definitions from ninjawords:

“pizza: noun. A baked Italian dish of a thinly rolled bread dough crust typically topped before baking with tomato sauce, cheese and other ingredients.

cat: noun. A domesticated subspecies of feline animal, commonly kept as a house pet.

‘pizza cat’ is not in the dictionary.”

How sad.

I don’t know what makes eating a cat-shaped pizza so great, but it is. Maybe it’s the removable bread stick arms (!), but we’ll get to that in a minute.

Here’s the basic assembly of our pizza cat. We used the Pioneer Woman’s pizza dough recipe. Be warned, this makes a lot of dough. We had enough leftover for extra bread sticks.

We rolled out the body first and stuck a tail behind it.

Then we shaped the head and the bread stick arms.

Then we slathered a garlic butter mixture on the bread sticks. My friend Adrienne really has a talent for creating pizza cat faces.

We loaded the body with sauce, cheese, and strips of basil leaves to create stripes. We placed both cookie sheets in the oven at 450 for 18 minutes. It was a little tricky since the dough was thicker in some places than others, but we didn’t burn it.

Place the bread sticks over the body.

And then add the head to the top.

Pizza cat is the best. Building the cat is as much fun as eating it.

d.i.y. magnetic spice rack

Christmas is a weird time for me and Ryan. We have yet to spend a Christmas together, so gift giving isn’t usually priority for us. Like, it’s March, and I still haven’t finished Ryan’s gift. I’m hoping this will be the month, though, because I can’t wait to show you.

This year, Ryan gave me the best gift – a magnetic spice rack. He’s been meaning to give me this gift on numerous occasions for about a year (he’s had it in his house the entire time!). And two and a half months later, I eventually set it up.

This magnetic spice rack is the best thing ever.

First, some background. I have this eyesore sitting in my kitchen.

Seriously, who puts a circuit breaker in the middle of the kitchen? And then there was this  hell.

This is my over-crowded spice cabinet. I couldn’t reach or see anything. I’m on my tip-toes just trying to take this picture.

He used this instructable for creating the canisters. He bought the canisters from here and the magnets from here. These are the canisters. He glued some strong magnets to the back.

To make them pretty you will need fun stickers or labels. You can also use white labels and decorate them yourself.

My best friend gave me the crafty stickers. They’re the best. You’ll also need some fun colored markers.

If your label is too long you can cut it to fit the canister.

Press the label on the lid and run your fingernail along the edge to seal the sticker in. Then take a knife, follow along the edge and slice through the sticker.

Then gently pull up on the sticker.

This was the first one I did. With practice, I was able to get rid of the frayed edge look. You can also use your fingernail to push the frayed label into the seam of the lid.

The canisters look great in my kitchen. You can decorate them so many ways.

First time CSA Members

Ryan and I bought a CSA share from a local farm, so we’ll be getting fresh veggies every other week. We visited the farm yesterday, which made it all the more meaningful.

This week’s haul included fresh carrots, kale, swiss chard, strawberries, cilantro, and green beans.
